UnReal World is a game that is almost entirely about crafting and survival. I've played it quite a bit, and while I enjoyed it, it's *extremely* realistic in terms of, say, the time investment required to build a log cabin (it's now free, I believe.)
Wayward also has a lot of crafting and is a bit more whimsical (free.)
Don't Starve is real time and leans more heavily toward the survival aspect versus long-term infrastructure (not free.)
Also, you probably haven't heard of this one because it's kind of under the radar, but there is a video game called minecraft that might be up your alley as well.
