I've not much experience but i've found interesting:
-Dungeon Minder (you aren't the hero but his fairy and you must ensure his suvivability by buff or debuff on enemies, nice idea, replayable caus you must chose between different magic upgrades, has humor).
-A Quest Too Far (you start as an old and strong hero and the you will decay, nice concept)
-Sword In Hand (just played 2 match, funny)
-DoomRL (surely more complex of the above but very fun and immedaite, now it has very nice tiles, with music and sounds).

A quest too far is very nice and also easy to learn.. DoomRL is one of my favourite roguelikes ever but you probably already know it.
Take a look at this thread: http://roguetemple.com/forums/index.php?topic=229.0

You Only Live Once is awesome
Vicious Orcs is a nice, simple game
Smart Kobold is great for a careful, thoughtful challenge

(Yeah, I'm a fan of Jeff's 7DRLs :P)

PrincessRL is perhaps the most fantastic coffeebreak there is.

I second Vicious Orcs. Never got into Princess. Going to have to give it a second look.

To an unskilled button masher, like myself, all Roguelikes are quick.  :-)

Yeah Crawl Stone Soup is very much a coffee-break roguelike to a beginner :)

Don't know if I would really consider DoomRl a coffee-break rl anymore. Vicious Orcs, Sewer Jacks, Sword In Hand, Frozen Depths, Troll Slayer, and Monster Slayer Show would be my picks for quickie pick up games. I think I might even consider Rogue a coffee-break rl now days.

Before i forgot to mention WazHack. It has lateral perspective but apart this is coherent with rougelike criterion. It's inspired by NetHack.
I've found it to be extremely fun and immedaite and i advise to give it a try. It's also a lot replayable. thoug it's not free the cost is extremely low (2$ to get the full beta).

Nice visuals, clear combat system, high replayability and original rules (no hp cap, no xp).

I'd check out Brogue. Perhaps not "pure-coffeebreak" but close enough and well worth checking out.
